  • 1 tablespoon olive oil

For the Bowl
  • 1 cup orzo pasta Cook according to package instructions.
  • 1 cup mixed vegetables (e.g., bell peppers, spinach, cherry tomatoes) Substitute with seasonal vegetables as desired.
  • 1/4 cup feta cheese For whipped feta.
  • 2 cloves garlic
  • Fresh herbs (e.g., parsley, basil) For garnish.

Method
 

Preparation
  1. Cook the orzo pasta according to package instructions; set aside.
  2. In a bowl, mix Dijon mustard, lemon juice, zest, olive oil, salt, and pepper.
  3. Coat the chicken breasts with the marinade and let sit for 15 minutes.
Cooking
  1. In a skillet, cook the marinated chicken over medium heat until fully cooked; remove and slice.
  2. In the same skillet, add mixed vegetables and sauté until tender.
  3. For the garlic whipped feta, blend feta cheese and garlic in a food processor until creamy.
Assembly
  1. To assemble the bowl, add cooked orzo, sautéed vegetables, sliced chicken, and a dollop of garlic whipped feta.
  2. Garnish with fresh herbs and serve warm.

Notes

Marinating chicken for at least 15 minutes enhances flavor; for best texture, cook orzo al dente. Leftovers can be stored in the refrigerator for up to 3 days.
