Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 0.5 cup plain Greek yogurt or sour cream
  • 2 tablespoons fresh lemon zest (about 2 lemons)
  • 2 tablespoons fresh lemon juice
  • 1.5 cups fresh blueberries
  • 1 tablespoon all-purpose flour (to coat berries)
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Line the bottom and sides with parchment paper for easy removal.
Whisk Dry Ingredients
  1. In a medium mixing bowl, whisk together 1.5 cups of flour, baking powder, and salt. Set this bowl aside.
Cream Butter and Sugar
  1. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
Incorporate Wet Ingredients
  1. Add the eggs one at a time, beating well after each addition. Mix in the Greek yogurt, lemon zest, and lemon juice.
Combine and Prepare Berries
  1. Gently fold the dry ingredients into the wet mixture until just combined. Toss the blueberries with 1 tablespoon of flour, then fold into the batter.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes or until a toothpick comes out clean.
Glazing and Serving
  1. Let the cake cool in the pan for 10 minutes. Whisk together the powdered sugar and lemon juice to make a glaze and drizzle over the warm loaf.

Notes

Use room temperature ingredients for better emulsification. Fresh blueberries are preferred; if using frozen, do not thaw before adding.
