  • 1 cup cottage cheese Choose full-fat or low-fat based on preference.
  • 1 cup blueberries Fresh or frozen can be used.
  • 1 cup oats Rolled oats work best.
  • 2 pieces eggs Large eggs recommended.
  • 1 piece lemon Zest and juice required.
  • 1 teaspoon baking powder For leavening the batter.
  • 1 tablespoon honey or maple syrup Add sweetness to taste.
  • 1/2 teaspoon vanilla extract For additional flavor.
  • 1 pinch salt Enhances flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine cottage cheese, oats, eggs, lemon zest and juice, baking powder, honey (or maple syrup), vanilla extract, and salt.
  3. Gently fold in the blueberries.
Baking
  1. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake for 15-20 minutes, or until the pancake bites are set and golden around the edges.
  3. Allow them to cool slightly before removing from the tin.

Notes

Serve them warm right out of the oven or topped with yogurt, honey, or fresh fruit. Store in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
