  • 2 cups cooked pasta Use any pasta shape you prefer.
  • 2 cups fresh sweet corn (or canned) If using canned, drain before using.
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled feta cheese
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.

Method
 

Preparation
  1. In a large bowl, combine the cooked pasta, sweet corn, cherry tomatoes, red onion, cilantro, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Drain any excess liquid before serving. Avoid freezing as it may affect the texture.
