Preparation
- Preheat your oven to 375°F (190°C).
- Rinse the hens under cold water and pat them dry with paper towels.
- Rub the hens all over with olive oil or melted butter.
- Season the hens inside and out with salt, pepper, garlic powder, onion powder, and dried rosemary.
- Stuff the cavity of each hen with lemon wedges.
- Place the hens breast side up in a roasting pan, using a rack if available.
Cooking
- Roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Baste the hens with their juices halfway through cooking.
- Let them rest for about 10 minutes before carving.
Notes
Brining the hens can add more moisture and flavor. Experiment with spices for unique variations. Serve with roasted vegetables and mashed potatoes.
