Ingredients
  

For the cheese filling
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2-3 pieces fresh jalapeños, seeded and diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
For the sandwiches
  • 4 slices your favorite bread (sourdough works great)
  • 2 tablespoons butter for frying

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, mayonnaise, garlic powder, and onion powder. Mix until well blended.
  2. Spread the cheese mixture generously onto two slices of bread.
  3. Top with the remaining slices of bread to create sandwiches.
Cooking
  1. Heat a skillet over medium heat and add 1 tablespoon of butter.
  2. Once the butter is melted, place the sandwiches in the skillet. Cook until the bottom is golden brown, about 3-4 minutes.
  3. Carefully flip the sandwiches and add the remaining tablespoon of butter to the pan. Cook until the other side is golden and the cheese is melted, about another 3-4 minutes.
  4. Remove from the skillet, slice in half, and serve warm.

Notes

Serve hot with a side of creamy tomato soup or salad. Store leftovers in an airtight container in the refrigerator for 2-3 days.
