Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts Substitute with tofu or tempeh for a vegetarian version.
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a more intense taste.
  • 1 teaspoon Onion Powder Fresh onion can be used for a more intense taste.
  • 1 teaspoon Smoked Paprika Sweet paprika is a milder alternative.
For the Salsa
  • 2 cups Fresh Peaches Substitute with nectarines, mangoes, or apricots.
  • 2 pieces Jalapeños Adjust to taste or substitute with poblano.
  • 1 piece Red Onion Yellow onion is a good alternative.
  • 2 cloves Garlic Can replace with garlic powder if needed.
  • 2 tablespoons Honey Use maple syrup for a vegan option.
  • 2 tablespoons Apple Cider Vinegar White vinegar is a suitable substitute.
  • 2 tablespoons Soy Sauce Use gluten-free soy sauce or tamari if needed.
  • 2 tablespoons Lime Juice Lemon juice can be used as a substitute.

Method
 

Preparation
  1. In a bowl, combine olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika. Mix well.
  2. Add the chicken breasts to the marinade, ensuring they are coated evenly. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
  3. While the chicken marinates, prepare the peach and jalapeño salsa. Chop the fresh peaches, jalapeños, red onion, and garlic. Combine them in a bowl and mix in the honey, apple cider vinegar, soy sauce, and lime juice. Set aside.
Cooking
  1. Preheat your grill or stovetop skillet over medium-high heat.
  2. Cook the marinated chicken for about 6–7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  3. Just before removing the chicken from the heat, spoon some of the peach and jalapeño salsa on top and let it warm for 1–2 minutes.
  4. Serve the Jalapeño Peach Chicken hot with extra salsa on the side for those who want more heat and sweetness.

Notes

For best results, marinate the chicken overnight for deeper flavor. Adjust the number of jalapeños based on your spice preference.
