Jalapeño Lime Chicken and Corn

Ingredients
  

For the Chicken and Marinade
  • 4 pieces Chicken breasts Boneless, skinless preferred.
  • 2 pieces Jalapeños Seeds removed for milder flavor if desired.
  • 2 cups Corn Fresh or frozen.
  • 1/4 cup Lime juice Freshly squeezed is best.
  • 2 tablespoons Olive oil For marinating.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For Serving
  • 1/4 cup Fresh herbs Such as cilantro or parsley.

Method
 

Preparation
  1. Preheat the Blackstone griddle or grill.
  2. In a bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and pepper to create a marinade.
  3. Add the chicken breasts and jalapeños to the marinade, coating them well.
Cooking
  1. Once the griddle is hot, place the marinated chicken on it and cook for about 5-7 minutes on each side or until fully cooked.
  2. Add the corn to the griddle and char it for a few minutes until it is heated through and slightly browned.
Serving
  1. Serve the chicken and corn with rice, tortillas, or a salad.
  2. Garnish with fresh herbs and additional lime juice if desired.

Notes

Store leftovers in an airtight container for up to 3 days. To reheat, warm on the griddle or microwave.
