Ingredients
  

For the Soup Base
  • 1 lb Italian sausage Choose spicy or sweet based on preference
  • 15 oz can white beans, drained and rinsed Any white beans like cannellini or navy beans can be used
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can use vegetable broth for a vegetarian version
  • 14.5 oz can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • to taste Salt and pepper
  • 2 cups spinach or kale Optional, for added nutrition
  • 1/2 cup heavy cream (optional) Stir in for a creamier soup

Method
 

Cooking Instructions
  1. In a large pot, brown the Italian sausage over medium heat.
  2. Add the chopped onion, carrots, celery, and garlic; sauté until softened.
  3. Stir in the white beans, diced tomatoes, chicken broth, thyme, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the spinach or kale and heavy cream (if using) and cook for an additional 5 minutes.
  6. Serve hot and enjoy!

Notes

This soup can be served with crusty bread or a refreshing side salad. It holds well in the fridge for meal prep and the flavors deepen over time.
