Ingredients
  

Panini Ingredients
  • 2 slices Ciabatta or crusty bread Use your favorite type of bread.
  • 1 cup Mozzarella cheese, shredded or sliced Fresh mozzarella is preferred.
  • 1/4 cup Fresh basil pesto Homemade or store-bought.
  • 1/2 cup Roasted tomatoes Use well-drained store-bought or homemade roasted tomatoes.
  • 1 tbsp Olive oil For grilling the sandwich.
  • to taste Salt and pepper Season to your preference.

Method
 

Preparation
  1. Preheat a panini press or skillet over medium heat.
  2. Spread basil pesto on one side of each slice of bread.
  3. Layer mozzarella cheese and roasted tomatoes on top of the pesto on one slice.
  4. Season with salt and pepper to taste, then place the other slice of bread on top, pesto side down.
  5. Drizzle olive oil on the outside of the sandwich.
Grilling
  1. Grill the sandwich in the panini press or skillet until the bread is golden and the cheese is melted, about 3-5 minutes.
  2. Slice and serve hot.

Notes

For a light meal, pair with a mixed greens salad or tomato soup. Store leftovers in an airtight container for up to 2 days, or freeze ungrilled sandwiches for up to a month.
