Preparation
- Preheat a panini press or skillet over medium heat.
- Spread basil pesto on one side of each slice of bread.
- Layer mozzarella cheese and roasted tomatoes on top of the pesto on one slice.
- Season with salt and pepper to taste, then place the other slice of bread on top, pesto side down.
- Drizzle olive oil on the outside of the sandwich.
Grilling
- Grill the sandwich in the panini press or skillet until the bread is golden and the cheese is melted, about 3-5 minutes.
- Slice and serve hot.
Notes
For a light meal, pair with a mixed greens salad or tomato soup. Store leftovers in an airtight container for up to 2 days, or freeze ungrilled sandwiches for up to a month.
