Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix well.
  4. In another bowl, combine the flour and baking powder. Gradually add this to the wet mixture and mix until a dough forms.
  5. Divide the dough into small balls and create a hollow in the center of each ball.
  6. Fill each hollow with your choice of fruit jam.
  7. Shape the cookies to resemble peaches, using food coloring to create a realistic peach look.
Baking
  1. Bake for 12-15 minutes or until lightly golden.
  2. Let cool and dust with powdered sugar if desired.

Notes
