Preparation
- Preheat a skillet or panini press over medium heat.
- Brush the outside of each bread slice with olive oil or butter.
- Spread pesto sauce and mayonnaise (if using) on the inside of the bread.
- Layer mozzarella cheese, shredded chicken, roasted red peppers, and fresh basil on two slices of bread.
- Season lightly with salt and black pepper.
- Top with the remaining bread slices to close the sandwiches.
Cooking
- Place sandwiches in the skillet or panini press and cook for 3–5 minutes per side until golden and crispy.
- Remove from heat, slice, and serve warm.
Notes
Serve warm with a side of crispy potato chips or a fresh garden salad. Consider adding a side of marinara sauce for dipping.
