Ingredients
  

Main ingredients
  • 4 slices slices ciabatta or rustic bread
  • 2 tablespoons olive oil or butter
  • 1 cup cooked, shredded chicken
  • 4 slices mozzarella cheese
  • 1/2 cup roasted red peppers, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons pesto sauce
  • 1 tablespoon mayonnaise (optional)
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat a skillet or panini press over medium heat.
  2. Brush the outside of each bread slice with olive oil or butter.
  3. Spread pesto sauce and mayonnaise (if using) on the inside of the bread.
  4. Layer mozzarella cheese, shredded chicken, roasted red peppers, and fresh basil on two slices of bread.
  5. Season lightly with salt and black pepper.
  6. Top with the remaining bread slices to close the sandwiches.
Cooking
  1. Place sandwiches in the skillet or panini press and cook for 3–5 minutes per side until golden and crispy.
  2. Remove from heat, slice, and serve warm.

Notes

Serve warm with a side of crispy potato chips or a fresh garden salad. Consider adding a side of marinara sauce for dipping.
