Ingredients
  

Main Ingredients
  • 12 oz Cheese tortellini Cook according to package instructions
  • 4 oz Salami Sliced
  • 4 oz Turkey or beef deli meat Sliced
  • 4 oz Provolone cheese Sliced
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Red onion Chopped
Dressing
  • 1/4 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tbsp Italian seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Method
 

Preparation
  1. Cook the cheese tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled tortellini, salami, turkey or beef deli meat, provolone cheese, cherry tomatoes, and red onion.
Making the Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
Combining and Serving
  1. Pour the dressing over the tortellini salad and toss to combine.
  2. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad is best served chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days. Flavors will develop as it sits. Customize with other ingredients like bell peppers or cucumbers.
