  • 8 ounces cream cheese, softened Ensure cream cheese is softened to room temperature.
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies, drained Can substitute with any diced tomatoes with green chilies.
  • 2 cups biscuit mix (like Bisquick)
  • 1/2 cup shredded cheddar cheese (optional) Feel free to substitute with your favorite cheese.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the pork sausage, softened cream cheese, drained Rotel tomatoes, biscuit mix, and shredded cheddar cheese (if using).
  3. Mix all ingredients thoroughly until well combined.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. Place the sausage balls on an ungreased baking sheet.
  6. Bake for 15-20 minutes, or until golden brown and cooked through.
  7. Serve hot.
