Preparation
- Preheat your oven to 400°F (200°C).
- Peel and slice the carrots into 1/2-inch rounds.
- In a large bowl, whisk together the olive oil, honey, minced garlic, thyme, salt, and pepper until well combined.
- Add the sliced carrots to the bowl and toss until they are fully coated in the mixture.
Roasting
- Arrange the carrots in a single layer on a parchment-lined baking sheet.
- Roast in the oven for 25-30 minutes, flipping halfway through for even browning.
- Once roasted, remove the carrots from the oven and drizzle them with extra honey.
- Garnish with fresh herbs and serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at a low temperature or in the microwave until warmed through.
