  • 2 tablespoons olive oil
  • 3 tablespoons honey plus extra for drizzling
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 pinch red pepper flakes (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the carrots into 1/2-inch rounds.
  3. In a large bowl, whisk together the olive oil, honey, minced garlic, thyme, salt, and pepper until well combined.
  4. Add the sliced carrots to the bowl and toss until they are fully coated in the mixture.
Roasting
  1. Arrange the carrots in a single layer on a parchment-lined baking sheet.
  2. Roast in the oven for 25-30 minutes, flipping halfway through for even browning.
  3. Once roasted, remove the carrots from the oven and drizzle them with extra honey.
  4. Garnish with fresh herbs and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at a low temperature or in the microwave until warmed through.
