Ingredients
  

For the Chimichurri Sauce
  • 1 bunch Cilantro (about 1 cup packed)
  • 1 bunch Italian parsley (about 1 cup packed)
  • 1/4 cup Fresh lime juice (about 1-2 limes)
  • 1/4 cup Chopped onion
  • 2 cloves Garlic
  • 1/2-3/4 tsp Salt (adjust to personal taste)
  • 1/2 tsp Smoked paprika
  • a pinch Cayenne
Main Ingredients
  • 1 lb Large raw shrimp or prawns (peeled and deveined)
  • 2 tsp Olive oil
  • to taste Salt and pepper
  • a few Jalapeno slices (for additional heat)
  • a sprinkle Fresh oregano (optional for garnish)

Method
 

Preparing the Chimichurri Sauce
  1. In a food processor, combine the cilantro, Italian parsley, chopped onion, garlic, lime juice, and salt. Blend until the herbs are finely chopped but not puréed.
  2. Stir in smoked paprika and a pinch of cayenne for added flavor. Adjust seasoning to taste and set aside.
Cooking the Shrimp
  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the shrimp and season with salt and pepper. Sauté for about 2-3 minutes on each side, or until they turn pink and opaque.
Combining and Serving
  1. Remove the skillet from heat and pour the chimichurri sauce over the shrimp. Toss to combine, ensuring each shrimp is coated.
  2. Serve immediately, garnished with fresh oregano and jalapeno slices if desired.

Notes

For the best flavor, let the chimichurri sauce sit for at least 15 minutes before using it on the shrimp. Adjust the heat level of the dish by modifying the amount of cayenne and jalapeno.
