Ingredients
  

For the Stew
  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 3 cup carrots, sliced
  • 2 cup potatoes, diced
  • 1 cup parsnip, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup lentils (green or brown)
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and sauté until translucent.
  3. Add the carrots, potatoes, and parsnip, and cook for another 5 minutes.
  4. Stir in the garlic and cook for an additional minute.
Cooking
  1. Pour in the vegetable broth and add the lentils, thyme, and rosemary. Bring to a boil.
  2. Reduce the heat, cover, and simmer for 30-35 minutes until the lentils and vegetables are tender.
  3. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with fresh parsley.

Notes

Pairs beautifully with crusty bread, delicious served with a salad or roasted vegetables. Can be filled in wraps or pita pockets.
