  • 2 large Sweet potatoes Peeled and cubed
  • 1 lb Ground beef Lean preferred
  • 1/4 cup Hot honey Adjust according to spice preference
  • 2 tbsp Olive oil For roasting sweet potatoes
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 1 large Avocado Sliced
  • 1/2 cup Sour cream Or Greek yogurt, for serving
  • 1/4 cup Chopped green onions For garnish
  • 1/4 cup Fresh cilantro For garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
Cooking
  1. In a skillet, cook the ground beef over medium heat until browned and fully cooked. Season with salt, pepper, and hot honey to taste.
Assembly
  1. Assemble the bowls by layering roasted sweet potatoes, ground beef, sliced avocado, and toppings like sour cream, green onions, and cilantro. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, microwave until warmed through. Consider keeping the beef separate if storing for a longer period.
