Ingredients
  

Marinade
  • 1 cup buttermilk (or substitute with plain yogurt) Alternatively, use homemade buttermilk by mixing milk with vinegar or lemon juice.
  • 2 pieces boneless chicken thighs Can substitute with chicken breasts.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Coating
  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • Oil for frying Use high smoke point oil like canola or peanut oil.
Burger Assembly
  • 2 pieces burger buns Preferably toasted.
  • 1 cup leafy greens (like lettuce or spinach)
  • 1 medium sliced tomatoes
  • 1/4 cup hot honey Or mix honey with chili flakes for a DIY version.

Method
 

Marination
  1. In a bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add chicken thighs, ensuring they are well coated. Refrigerate for at least 1 hour, or overnight for maximum flavor.
Coating
  1. In another bowl, mix the flour and breadcrumbs together.
  2. Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge the chicken thighs in the flour and breadcrumb mixture until fully coated.
Frying
  1. Heat oil in a deep frying pan over medium heat.
  2. Carefully place the chicken in the hot oil and fry for about 6-8 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
  3. Once cooked, allow the chicken to drain on paper towels.
Assembly
  1. Toast the burger buns lightly in a separate pan.
  2. Assemble the burger by placing leafy greens and a slice of tomato on the bottom half of the bun, adding the crispy chicken, and drizzling with hot honey. Top it with the bun's upper half.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer rather than microwave to maintain crispiness.
