Ingredients
  

For the salmon
  • 4 pieces 4-6 ounce salmon fillets Use fresh or thawed frozen fillets.
  • 3 tablespoons low-sodium soy sauce or tamari Use tamari for gluten-free option.
  • 2 tablespoons honey Can reduce for lower sugar content.
  • 2 tablespoons sriracha Adjust according to preferred spice level.
  • 2 teaspoons minced garlic Freshly minced is recommended.
  • 3 tablespoons water
For serving
  • 2 cups cooked white rice Fluffy, cooked rice as the base.
  • 1 piece avocado, sliced Fresh for best flavor.
  • 1 piece cucumber, sliced
  • 1 cup cooked edamame Adds protein and texture.
  • 1/2 cup sriracha mayo Drizzle on top before serving.

Method
 

Preparation
  1. Place salmon fillets on a cutting board and cut into bite-sized cubes.
  2. In a small bowl, whisk together the soy sauce, honey, sriracha, minced garlic, and water.
Cooking
  1. Heat a large non-stick skillet over medium-high heat with a drizzle of oil.
  2. Add the salmon pieces and cook for 3-4 minutes until lightly browned.
  3. Pour the glaze mixture over the salmon and continue cooking for another 2-3 minutes until the sauce has thickened and caramelized.
Assembly
  1. Divide the cooked rice into four bowls.
  2. Top each bowl with the glazed salmon pieces.
  3. Add slices of fresh avocado, cucumber, and a portion of cooked edamame.
  4. Drizzle with sriracha mayo before serving.

Notes

Serve warm and garnish with extra sriracha mayo for those who love an extra kick. Store leftovers in an airtight container in the refrigerator for up to 2 days.
