  • 4 pieces bone-in, skin-on chicken thighs
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar (or white vinegar)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ½ teaspoon sesame oil (optional) to add depth of flavor
  • 1 teaspoon sesame seeds (optional, for garnish)
  • Chopped green onions (for garnish)
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together honey, soy sauce, olive oil, rice vinegar, minced garlic, ginger, and sesame oil until smooth.
  3. Season the chicken thighs with salt and pepper.
  4. Place the chicken in a resealable bag or bowl and pour the marinade over. Let it marinate for at least 30 minutes, or up to 2 hours.
Cooking
  1. Line a baking sheet with parchment paper and place the marinated chicken thighs on it.
  2. Pour any remaining marinade over the chicken.
  3. Bake for 35-40 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden.
  4. Remove from the oven and let the chicken rest for a few minutes.
  5. Sprinkle with sesame seeds and chopped green onions before serving.

Notes

For best results, marinate overnight if possible. Pat the chicken dry before marinating for the crispiest skin. You can prepare the marinade in advance.
