Ingredients
  

For the Salad
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber diced
  • 1/2 cup feta cheese, crumbled
For the Dressing
  • 1/4 cup honey
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until they are caramelized and tender.
Salad Assembly
  1. While the sweet potatoes are roasting, prepare the salad. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and feta cheese.
  2. In a small bowl, whisk together honey and lemon juice to make the dressing.
  3. Once the sweet potatoes are done, let them cool slightly, then add them to the salad.
  4. Drizzle the honey dressing over the salad, toss gently, and serve.

Notes

Cut the sweet potatoes into uniform cubes for even cooking. Add a pinch of cinnamon for extra flavor. Customize greens with spinach or kale if desired.
