Preparation

Salad Assembly
- While the sweet potatoes are roasting, prepare the salad. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and feta cheese.
- In a small bowl, whisk together honey and lemon juice to make the dressing.
- Once the sweet potatoes are done, let them cool slightly, then add them to the salad.
- Drizzle the honey dressing over the salad, toss gently, and serve.
Notes
Cut the sweet potatoes into uniform cubes for even cooking. Add a pinch of cinnamon for extra flavor. Customize greens with spinach or kale if desired.
