For the Roasted Apples
  • 4 large large apples, cored and sliced Use crisp varieties such as Granny Smith or Honeycrisp.
  • 1/4 cup honey Adjust to taste.
  • 1 tablespoon olive oil Use extra virgin for best flavor.
  • 1/2 teaspoon cinnamon Can be adjusted depending on personal preference.
  • Salt and pepper to taste Salt and pepper to taste Enhances overall flavor.
For the Whipped Feta
  • 1/2 cup feta cheese, crumbled Fresh feta works best.
  • 1/2 cup heavy cream Can substitute with Greek yogurt for a lighter version.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the apple slices with honey, olive oil, cinnamon, salt, and pepper.
  3. Spread the apples on a baking sheet lined with parchment paper.
Roasting
  1. Roast in the oven for 25-30 minutes, or until caramelized and tender.
Whipping the Feta
  1. Meanwhile, in a mixing bowl, beat the heavy cream until soft peaks form.
  2. Gently fold in the crumbled feta cheese.
Serving
  1. Serve the roasted apples warm, topped with the whipped feta.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently before serving. Keep the whipped feta separate until serving for best texture.
