Ingredients
  

For the Marinade
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil
  • to taste Salt and pepper Add according to personal preference
Main Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 2 cups cooked brown rice or quinoa Choose either brown rice or quinoa as a base
  • 1 cup broccoli florets Steamed until tender
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped green onions For garnish

Method
 

Preparation
  1. In a bowl, mix honey, Dijon mustard, olive oil, salt, and pepper to make the marinade.
  2. Place the chicken in the marinade and let it sit for at least 30 minutes.
  3. While the chicken marinates, prepare the brown rice or quinoa as directed.
Cooking
  1. Preheat the grill or a skillet over medium heat.
  2. Cook the chicken for about 6-7 minutes on each side or until fully cooked.
  3. While the chicken cooks, steam the broccoli until tender.
Assembly
  1. Slice the cooked chicken and assemble the bowls with rice, chicken, broccoli, and cherry tomatoes.
  2. Top with chopped green onions and drizzle any extra marinade if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep components separate until ready to eat to maintain texture.
