  • 1/4 cup lime juice Fresh lime juice preferred for better flavor.
  • 1 tablespoon olive oil For marinating the chicken.
  • to taste Salt and pepper Adjust according to preference.
For the Rice
  • 1 cup rice White or brown rice can be used.
  • 1/2 cup chicken broth or water Use chicken broth for extra flavor.
  • 1 ripe avocado Make sure it’s soft for mashing.
  • 1/4 cup cilantro Optional, can substitute with parsley.

Method
 

Preparation
  1. In a bowl, mix honey, lime juice, olive oil, salt, and pepper to create the marinade.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes to absorb the flavors.
Cooking
  1. Cook the rice according to package instructions, substituting chicken broth for water for extra flavor.
  2. While the rice cooks, grill or pan-sear the marinated chicken until fully cooked (about 6-7 minutes per side).
Finishing Touches
  1. Mash the avocado and mix it into the cooked rice, adding cilantro if desired, and season with salt.
  2. Serve the chicken over the avocado rice for a delightful meal.

Notes

For best flavor, aim to marinate the chicken for a few hours. When cooking, do not overcrowd the pan.
