Preparation
- Cook the rice according to package instructions.

- Grill or pan-cook the chicken until fully cooked and glazed with the marinade.
- Prepare the mango salsa by chopping mango, red onion, and cilantro; mix together in a bowl, and season with salt and pepper.
Assembly
- In a serving dish, layer the cooked rice, black beans, sliced chicken, and top with mango salsa.
- Serve warm.
Notes
For extra flavor, allow the chicken to marinate longer than 30 minutes. Garnish with lime wedges and cilantro during serving.
