  • 4 pieces Chicken breasts
  • 1/2 cup Honey
  • 1/4 cup Lime juice
  • 2 cups Rice Cooked according to package instructions
  • 1 can Black beans Rinsed and drained
  • 1 piece Mango Diced
  • 1/2 cup Red onion Chopped
  • 1/4 cup Cilantro Chopped
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a bowl, mix honey and lime juice. Marinate the chicken in this mixture for at least 30 minutes.
Cooking
  1. Grill or pan-cook the chicken until fully cooked and glazed with the marinade.
  2. Prepare the mango salsa by chopping mango, red onion, and cilantro; mix together in a bowl, and season with salt and pepper.
Assembly
  1. In a serving dish, layer the cooked rice, black beans, sliced chicken, and top with mango salsa.
  2. Serve warm.

Notes

For extra flavor, allow the chicken to marinate longer than 30 minutes. Garnish with lime wedges and cilantro during serving.
