Ingredients
  

For the Chicken and Quinoa
  • 2 pieces chicken breasts Boneless
  • 1 cup quinoa Rinsed
  • 2 cups water For cooking quinoa
For the Honey-Lime Glaze
  • 1/4 cup honey
  • 2 pieces limes, juiced
For Grilling
  • 1 piece mango, sliced For grilling
  • Salt and pepper to taste
  • Fresh herbs for garnish e.g., cilantro or parsley

Method
 

Cooking the Quinoa
  1. Rinse the quinoa under cold water, then combine it with 2 cups of water in a pot.
  2. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until fluffy.
Grilling the Chicken and Mango
  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix honey and lime juice together.
  3. Season chicken breasts with salt and pepper, and brush with the honey-lime mixture.
  4. Grill the chicken for about 6-7 minutes per side or until fully cooked.
  5. Add mango slices to the grill for the last 2-3 minutes until charred.
Serving
  1. Layer quinoa, grilled chicken, and mango on a plate, then garnish with fresh herbs.

Notes

For added flavor, marinate the chicken in the honey-lime mixture for an hour before grilling. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F.
