Cooking the Quinoa
- Rinse the quinoa under cold water, then combine it with 2 cups of water in a pot.
- Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until fluffy.
Grilling the Chicken and Mango
- Preheat the grill to medium-high heat.
- In a small bowl, mix honey and lime juice together.
- Season chicken breasts with salt and pepper, and brush with the honey-lime mixture.
- Grill the chicken for about 6-7 minutes per side or until fully cooked.
- Add mango slices to the grill for the last 2-3 minutes until charred.
Serving
- Layer quinoa, grilled chicken, and mango on a plate, then garnish with fresh herbs.
Notes
For added flavor, marinate the chicken in the honey-lime mixture for an hour before grilling. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F.
