Preparation
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix the harissa paste and honey together to create the glaze.
- Arrange the barramundi fillets on a baking tray lined with parchment paper.
- Drizzle the harissa-honey mixture over the fish, coating it evenly.
- Add the sliced vegetables around the barramundi on the tray.
- Drizzle olive oil over the vegetables and season everything with salt and pepper.
- Place lemon slices on top of the fish and vegetables.
Cooking
- Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. For reheating, warm in the oven or microwave until heated through. This dish does not freeze well.
