Ingredients
  

For the fish
  • 4 pieces barramundi fillets
  • 2 tablespoons harissa paste
  • 2 tablespoons honey
  • 1 lemon (sliced) For garnishing
For the vegetables
  • 1 piece red bell pepper (sliced)
  • 1 piece zucchini (sliced)
  • 1 piece red onion (sliced)
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the harissa paste and honey together to create the glaze.
  3. Arrange the barramundi fillets on a baking tray lined with parchment paper.
  4. Drizzle the harissa-honey mixture over the fish, coating it evenly.
  5. Add the sliced vegetables around the barramundi on the tray.
  6. Drizzle olive oil over the vegetables and season everything with salt and pepper.
  7. Place lemon slices on top of the fish and vegetables.
Cooking
  1. Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  2. Remove from the oven and garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For reheating, warm in the oven or microwave until heated through. This dish does not freeze well.
