  • 2 large sweet potatoes, diced Cut evenly for even cooking.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons honey Adjust sweetness as per preference.
  • 1 tablespoon soy sauce Use gluten-free soy sauce if needed.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Slice the honey garlic sausage and scatter it over the sweet potatoes.
  5. Drizzle honey and soy sauce over the mixture.
Cooking
  1. Bake for about 25-30 minutes, or until sweet potatoes are tender and sausage is cooked through, stirring halfway.
  2. Garnish with fresh parsley if desired and serve warm.

Notes

To store leftovers, let the dish cool completely before transferring to an airtight container. It will keep well in the refrigerator for up to 3 days or can be frozen for up to 2 months. Reheat in microwave or oven until heated through. Adjust sweetness of honey and try adding other veggies for variations.
