Preparation
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the honey, minced garlic, lemon juice, lemon zest, salt, and black pepper.
- Pat the chicken thighs dry with paper towels.
Cooking
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy.
- Flip the chicken thighs over and pour the honey garlic mixture over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Let rest for a few minutes before garnishing with fresh parsley and serving.
Notes
To store leftovers, let them cool to room temperature and place them in an airtight container. Refrigerate for 3-4 days or freeze for up to 2 months. For better texture when reheating, thaw overnight and reheat in the oven.
