  • 4 pieces bone-in, skin-on chicken thighs
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 piece lemon, juiced
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • to taste fresh parsley, for garnish optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the honey, minced garlic, lemon juice, lemon zest, salt, and black pepper.
  3. Pat the chicken thighs dry with paper towels.
Cooking
  1. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  2. Once the oil is hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy.
  3. Flip the chicken thighs over and pour the honey garlic mixture over the top.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Let rest for a few minutes before garnishing with fresh parsley and serving.

Notes

To store leftovers, let them cool to room temperature and place them in an airtight container. Refrigerate for 3-4 days or freeze for up to 2 months. For better texture when reheating, thaw overnight and reheat in the oven.
