  • 2 tbsp olive oil, divided
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 0.5 cup snap peas
  • 2 cloves garlic, minced
Sauce Ingredients
  • 0.25 cup honey
  • 0.25 cup low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp fresh ginger, grated
For Serving
  • 1 cup cooked rice or noodles For serving

Method
 

Preparation
  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, cornstarch, water, and grated ginger until smooth. Set aside.
Cooking
  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook until golden brown and cooked through, about 5 to 7 minutes. Remove the chicken and set aside.
  2. In the same skillet, add the remaining olive oil and vegetables; stir-fry for 3-4 minutes until they are tender yet vibrant.
  3. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Return the chicken to the skillet, pour the sauce over, and cook until thickened, about 2-3 minutes.
Serving
  1. Serve over rice or noodles, garnished with sesame seeds and sliced green onions.

Notes

For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking. Use a mix of your favorite vegetables, like bell peppers, zucchini, and mushrooms.
