- In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, cornstarch, water, and grated ginger until smooth. Set aside.
Cooking
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook until golden brown and cooked through, about 5 to 7 minutes. Remove the chicken and set aside.
- In the same skillet, add the remaining olive oil and vegetables; stir-fry for 3-4 minutes until they are tender yet vibrant.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Return the chicken to the skillet, pour the sauce over, and cook until thickened, about 2-3 minutes.
Serving
- Serve over rice or noodles, garnished with sesame seeds and sliced green onions.
Notes
For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking. Use a mix of your favorite vegetables, like bell peppers, zucchini, and mushrooms.
