  • 1 pound high-quality beef sausage, sliced into rounds Opt for chicken or turkey sausage for a lighter version.
  • 1 large head broccoli, cut into small florets Feel free to substitute with seasonal vegetables.
  • 2 medium bell peppers (any color), sliced into strips or chunks
  • 1 medium zucchini, sliced into half-moons
  • 3 cloves garlic, finely minced
  • 1/4 cup honey Agave nectar or maple syrup can be used as substitutes.
  • 3 tablespoons soy sauce (low sodium preferred) Can be substituted with tamari for a gluten-free version.
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt Adjust to taste.
  • Optional: Sesame seeds or chopped green onions for garnish

Method
 

Preparation
  1. In a small bowl, whisk together the honey, minced garlic, soy sauce, and black pepper. Set this sauce aside for later.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the beef sausage slices in a single layer. Cook for 3 to 4 minutes per side until they are nicely browned and slightly crispy.
  4. Remove the sausage from the skillet and set it aside on a plate.
Cooking
  1. In the same skillet, add the broccoli, bell peppers, and zucchini.
  2. If the pan looks dry, you can add a tiny splash of water or more oil.
  3. Sauté the vegetables for about 5 to 7 minutes until they are tender-crisp.
  4. Return the browned beef sausage to the skillet with the vegetables. Stir everything together to combine.
  5. Pour the honey garlic sauce over the mixture. Stir constantly for 2 to 3 minutes until the sauce bubbles and thickens.
  6. Once the sauce has thickened and everything is well-coated, remove from heat.
  7. Garnish with sesame seeds or green onions if desired. Serve immediately while hot.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently with a splash of water or broth to prevent dryness.
