Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Boneless, skinless
  • 1/4 cup honey Natural sweetener
  • 2 tablespoons Dijon mustard Provides tanginess
  • 2 tablespoons olive oil For coating
  • Salt salt to taste Use as per preference
  • Pepper pepper to taste Use as per preference
  • Fresh thyme thyme (optional) For garnish
For the Vegetables
  • 2 pieces carrots, chopped
  • 2 pieces potatoes, chopped

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper until well combined.
  3. Place the chicken and chopped vegetables in a baking dish, spreading them out evenly.
  4. Drizzle the honey Dijon mixture over the chicken and veggies, making sure they are well coated.
Cooking
  1. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  2. Garnish with fresh thyme if desired and serve.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze in a freezer-safe bag for up to 3 months. Consider marinating the chicken for a few hours for extra flavor.
