Ingredients
  

For the Shrimp
  • 1 pound deveined shrimp, tail-off Use fresh or fully thawed frozen shrimp.
  • 2 tablespoons honey
  • 1 tablespoon chipotle seasoning Can substitute with cayenne pepper and smoked paprika.
  • 2 cloves garlic, minced
For the Tacos
  • 8 corn tortillas corn tortillas Use corn for gluten-free option.
For the Mango Salsa
  • 1 cup ripe mango, chopped
  • 1 cup cucumber, chopped
  • 1 medium red bell pepper, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime juiced

Method
 

Preparation
  1. In a mixing bowl, combine shrimp, honey, chipotle seasoning, and minced garlic. Toss to coat the shrimp evenly in the mixture and let them marinate for 10 minutes.
  2. While the shrimp are marinating, chop the mango, cucumber, and red bell pepper into bite-sized pieces. In a separate bowl, combine these chopped veggies with cilantro and lime juice, stirring gently to create a fresh and colorful salsa.
Cooking
  1. Heat a skillet over medium-high heat. Add the marinated shrimp and sauté for 3 to 5 minutes until they turn pink and are opaque.
  2. To warm up the tortillas, heat them in a dry skillet or microwave for 20 to 30 seconds until soft and pliable.
Assembly
  1. To assemble, place cooked shrimp on each tortilla and top evenly with the vibrant mango salsa.
  2. Garnish with extra lime juice or cilantro for added flavor and freshness.

Notes

If you have leftovers, store the shrimp and salsa separately in an airtight container in the refrigerator for up to 2 days. Reheat the shrimp in a skillet before assembling your tacos.
