Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine the pumpkin puree, eggs, and melted coconut oil. Mix until well combined.
- In a separate bowl, whisk together the almond flour, coconut flour, baking powder, sweetener, cinnamon, nutmeg, allspice, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
Baking
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before cutting into bars.
