Ingredients
  

For the pie crust
  • 1 piece pie crust Store-bought or homemade
For the filling
  • 4 cups fresh peaches, sliced Ripe peaches are preferred
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. Roll out the pie crust and fit it into a 9-inch pie plate.
  3. In a large bowl, mix the sugar, flour, salt, and cinnamon.
  4. Add the sliced peaches and gently toss to coat.
  5. In another bowl, whisk together the eggs, heavy cream, and vanilla extract.
  6. Pour the egg mixture over the peach filling.
Baking
  1. Bake for 45-50 minutes or until the filling is set and the top is golden brown.
  2. Let the pie cool before slicing and serving.

Notes

Serve slightly warm or at room temperature. Great with whipped cream or ice cream. Store covered in the refrigerator for up to 3-4 days, or freeze for up to 2-3 months.
