Ingredients

For the Latkes
  • 2 pounds Russet potatoes (about 3 or 4 large ones)
  • 1 large yellow onion
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour or matzo meal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 inch Vegetable oil for frying (enough to fill a pan)
For Serving
  • 1 cup unsweetened applesauce for serving

Method

Preparation
  1. Peel the potatoes and onion. Using a box grater or food processor, grate both into a large bowl.
  2. Place the grated mixture into a clean kitchen towel and squeeze to remove excess liquid.
  3. In a large bowl, combine the mixture with eggs, flour, salt, and pepper. Stir until coated.
  4. Heat oil in a skillet over medium-high heat. Test with a tiny piece of mixture; if it sizzles, it’s ready.
Cooking
  1. Drop 2 tablespoons of the mixture into the hot oil for each latke, flattening them slightly.
  2. Fry for 3-5 minutes on each side until golden brown and crispy.
  3. Remove from the pan and drain on paper towels.
Serving
  1. Serve hot with applesauce.

Notes

If you have leftovers, you can store cooked latkes in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a preheated oven at 400°F (200°C) for about 10 minutes to restore their crispiness.
