Preparation
- Wash the russet potatoes thoroughly under cold water to remove any dirt. Peel them if you prefer, or leave the skins on for added texture.
- Slice the potatoes lengthwise into strips, about 1/4 inch thick. Aim for uniform pieces to ensure even cooking.
- In a large bowl, combine water with 2 tablespoons of salt. Add the cut fries and let them soak for at least 30 minutes to remove excess starch.
- After soaking, drain the fries and lay them out on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.
Cooking
- In a deep pot or fryer, heat oil to 350°F (175°C). Use enough oil to fully submerge the fries.
- Carefully add a handful of fries to the hot oil, being cautious not to overcrowd the pot. Fry for about 4-6 minutes until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
- While they are still hot, sprinkle with additional salt and any other seasonings you prefer. Toss gently to ensure even coating.
