  • 4 large russet potatoes High-starch potatoes are ideal for crispy fries.
  • 4 cups water For soaking the fries.
  • 2 tablespoons salt For soaking the potatoes.
  • as needed Oil for frying (canola or vegetable oil) Use enough oil to fully submerge the fries.

Method
 

Preparation
  1. Wash the russet potatoes thoroughly under cold water to remove any dirt. Peel them if you prefer, or leave the skins on for added texture.
  2. Slice the potatoes lengthwise into strips, about 1/4 inch thick. Aim for uniform pieces to ensure even cooking.
  3. In a large bowl, combine water with 2 tablespoons of salt. Add the cut fries and let them soak for at least 30 minutes to remove excess starch.
  4. After soaking, drain the fries and lay them out on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.
Cooking
  1. In a deep pot or fryer, heat oil to 350°F (175°C). Use enough oil to fully submerge the fries.
  2. Carefully add a handful of fries to the hot oil, being cautious not to overcrowd the pot. Fry for about 4-6 minutes until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
  3. While they are still hot, sprinkle with additional salt and any other seasonings you prefer. Toss gently to ensure even coating.
  4. Enjoy your homemade French fries immediately for the best flavor and texture!

Notes

Serve with various dipping sauces like ketchup, mayo, or spicy aioli. Store leftovers in an airtight container for up to 2 days. Reheat in the oven or air fryer to restore crispiness.
