  • 4 large bell peppers
  • 1 pound lean ground turkey
  • 1 cup cooked quinoa Ensure quinoa is fluffy before adding
  • 1 cup diced tomatoes
  • 1 cup diced onions
  • 1 cup diced zucchini
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional for topping) Use cheddar, mozzarella, or pepper jack cheese

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
Cooking
  1. In a large skillet over medium heat, cook the ground turkey until browned.
  2. Add the diced onions, zucchini, and tomatoes to the skillet, and cook for another 5 minutes.
  3. Stir in the cooked quinoa, garlic powder, onion powder, salt, and pepper. Cook for an additional 2-3 minutes to combine all ingredients.
Assembly and Baking
  1. Stuff each bell pepper with the turkey and quinoa mixture.
  2. Place the stuffed peppers in a baking dish.
  3. If desired, sprinkle shredded cheese on top of each pepper.
  4. Cover the dish with foil and bake for 25-30 minutes.
  5. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  6. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to three months. Consider using different grains like brown rice or farro for variety.
