Ingredients

For the Meatballs
  • 1 lb lean ground turkey
  • 1/4 cup plain breadcrumbs Use day-old bread for best moisture retention
  • 1 large egg, lightly beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt Plus more to taste
  • 1/4 teaspoon black pepper
For the Soup
  • 1 tablespoon olive oil For sautéing
  • 1 medium yellow onion, finely diced
  • 2 large carrots, peeled and sliced into rounds
  • 2 stalks celery, sliced
  • 6 cups halal chicken broth Can substitute with vegetable broth
  • 1 cup small pasta (such as ditalini or orzo) Cooking times may vary
  • 2 cups fresh baby spinach
  • to taste Fresh parsley for garnish

Method

Preparation
  1. In a medium mixing bowl, combine the ground turkey, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Use your hands to mix gently until just combined.
  2. Roll the turkey mixture into small, bite-sized meatballs (about 1 inch in diameter) and set them aside on a plate.
Cooking
  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 to 7 minutes until the onions are translucent and the vegetables begin to soften.
  2. Pour the chicken broth into the pot and bring the mixture to a gentle boil.
  3. Carefully drop the turkey meatballs into the boiling broth one by one. Reduce the heat to medium-low and let them simmer for about 5 minutes.
  4. Add the small pasta to the pot. Continue to simmer for another 8 to 10 minutes, or until the pasta is tender and the meatballs are fully cooked through.
  5. Stir in the fresh spinach and let it wilt in the hot soup for about 1 minute.
  6. Taste the broth and add more salt or pepper if needed. Serve hot, garnished with fresh parsley.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3 days. The soup freezes well for up to 3 months. Cool the soup completely before transferring to freezer-safe containers. When reheating, you may need to add a splash of broth.
