  • 1 cup shredded chicken or turkey
  • 1 each avocado, sliced
  • 1/2 cup salsa
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook quinoa or brown rice according to package instructions.
  2. In a bowl, combine the cooked quinoa or rice, black beans, and shredded chicken or turkey.
  3. Top the mixture with sliced avocado and salsa.
  4. Season with salt and pepper to taste.
  5. Serve immediately or prepare ahead for meal prep and store in the refrigerator.

Notes

For meal prep, store your assembled taco bowls in airtight containers to keep them fresh for up to 4 days. To keep avocado from browning, pack it separately until serving.
