  • 1 lb lean ground meat (beef, turkey, or chicken)
  • 2 pieces bell peppers, diced
  • 14.5 oz can diced tomatoes
  • 1 cup cooked rice
  • 4 cups chicken or vegetable broth
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil (for cooking)

Method
 

Preparation
  1. In a large pot, heat a splash of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. Add the ground meat to the pot and cook until browned.
  3. Stir in the diced bell peppers and cook for a few minutes until slightly softened.
  4. Add the diced tomatoes, cooked rice, broth, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. Enjoy your hearty soup!

Notes

This soup can also be made in a slow cooker or Instant Pot. Flavor variations include adding Worcestershire sauce for extra flavor, experimenting with different types of peppers, or making it vegetarian by replacing the ground meat with a plant-based alternative.
