  • 1 cup milk Can substitute with dairy-free alternative
  • 2 pieces eggs Can substitute with flaxseed meal for vegan option
  • 1 scoop protein powder Optional
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Blend oats into a fine flour using a blender or food processor.
  2. In a bowl, mix the oat flour, milk, eggs, protein powder (if using), vanilla extract, and salt until smooth.
Cooking
  1. Heat a non-stick pan over medium heat and lightly grease it with oil or butter.
  2. Pour a quarter cup of batter into the pan, swirling to coat the surface evenly.
  3. Cook for 2-3 minutes on each side until golden brown and slightly crispy.
  4. Continue with the remaining batter, adjusting the heat as needed.
  5. Stack the crepes on a plate and serve them warm with your favorite toppings.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the microwave or skillet. For longer storage, freeze layered with parchment paper.
