Ingredients
  

For the Dough
  • 2 cups almond flour
  • 1 cup shredded mozzarella cheese For richness
  • 2 oz cream cheese Adds creaminess
  • 2 large eggs For binding
  • 1 tsp baking powder For leavening
  • to taste tsp salt
For the Filling
  • your choice of fillings (e.g., cooked meats, vegetables, cheese) Customize as desired

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for about 60-90 seconds until melted.
  3. Stir in almond flour, baking powder, and salt, then add eggs. Mix until a dough forms.
  4. Roll out the dough between two sheets of parchment paper to about 1/4 inch thick.
  5. Cut into circles and place your chosen fillings on one half of each circle.
  6. Fold the other half over and pinch the edges to seal.
  7. Place on a baking sheet and bake for 15-20 minutes until golden brown.

Notes

Serve warm, with marinara sauce for dipping. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
