Preparation
- In a mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir vigorously with a rubber spatula for 1-2 minutes until completely smooth.
- Add a pinch of salt and mix once more. Taste the mixture and adjust the sweetness if desired.
- Spoon the mixture into a mini muffin tin or silicone candy mold, filling each cavity about 3/4 full.
- Place the filled mold in the freezer for a minimum of 2-3 hours, or until completely solid.
- Once frozen, pop the bites out of the mold and transfer them to a freezer bag or airtight container for storage.
Notes
Store your frozen bites in an airtight container or freezer bag for up to 3 months.
