High Protein Frozen Peanut Butter Greek Yogurt Bites

Ingredients
  

Bite Mixture
  • 1 cup plain Greek yogurt (full-fat or 2%, high-protein brand recommended)
  • 1/2 cup creamy peanut butter (natural peanut butter works best, stir well before measuring)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir vigorously with a rubber spatula for 1-2 minutes until completely smooth.
  2. Add a pinch of salt and mix once more. Taste the mixture and adjust the sweetness if desired.
  3. Spoon the mixture into a mini muffin tin or silicone candy mold, filling each cavity about 3/4 full.
  4. Place the filled mold in the freezer for a minimum of 2-3 hours, or until completely solid.
  5. Once frozen, pop the bites out of the mold and transfer them to a freezer bag or airtight container for storage.

Notes

Store your frozen bites in an airtight container or freezer bag for up to 3 months.
