- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs and milk until well combined.
- Stir in the cheese, spinach, and bell peppers. Season with salt and pepper.
- Grease a muffin tin and pour the egg mixture into each cup, filling them about 3/4 full.
- Bake in the preheated oven for 18-20 minutes or until the egg bites are set and slightly golden.
- Allow them to cool before removing from the tin, then store in the fridge for up to a week.
