  • 1 cup shredded cheese cheddar or your choice
  • 0.5 cup chopped spinach
  • 0.5 cup diced bell peppers
  • Salt and pepper to taste

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the cheese, spinach, and bell peppers. Season with salt and pepper.
  4. Grease a muffin tin and pour the egg mixture into each cup, filling them about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes or until the egg bites are set and slightly golden.
  6. Allow them to cool before removing from the tin, then store in the fridge for up to a week.

Notes
