  • 1 lb lean ground turkey or chicken Can substitute with ground beef or plant-based alternatives.
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cheese (cheddar or Mexican blend), shredded Consider using different types for variety.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tbsp taco seasoning Use gluten-free if necessary.
  • to taste Salt and pepper
  • 1 tbsp Olive oil for cooking For sautéing.

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  2. Add the ground turkey or chicken, cooking until browned.
  3. Stir in black beans, corn, diced tomatoes, chicken broth, and taco seasoning. Bring to a simmer.
  4. Let cook for about 15 minutes, stirring occasionally.
  5. Add shredded cheese and stir until melted.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

Serve with warm tortilla chips, avocado slices, sour cream, or fresh cilantro. This soup can be made in advance and stored in the refrigerator or freezer.
