Preparation
- Cook the pasta according to package instructions. Drain and set aside.
Cooking
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
- Stir in the black beans, taco seasoning, salt, and pepper.
- Add the heavy cream (or Greek yogurt) and cheese to the skillet, stirring until the cheese is melted and the mixture is creamy.
- Combine the cooked pasta with the beef and bean mixture, mixing well.
- Garnish with fresh cilantro before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of milk or water to loosen the sauce. Can be frozen for up to 2 months; thaw overnight before reheating.
