  • 1 cup cottage cheese Full-fat or low-fat.
  • 8 large eggs Can use egg whites for a lighter option.
  • 1 cup shredded cheddar cheese Feel free to use different cheeses like feta or pepper jack.
  • 1 cup chopped spinach or kale Fresh preferred.
  • 1 medium bell pepper Diced.
  • 1 small onion Chopped.
  • 1/2 teaspoon salt Or to taste.
  • 1/4 teaspoon black pepper Or to taste.
  • Olive oil spray For coating the baking dish.

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil spray.
  2. In a large skillet over medium heat, cook the turkey sausage for 10-12 minutes, breaking it into crumbles until fully browned with no pink remaining and slightly crispy edges. Drain any excess fat and let cool for 2-3 minutes.
  3. In a large mixing bowl, whisk the eggs vigorously for 30-45 seconds until light and frothy. Add cottage cheese, raw chopped spinach, diced bell pepper, chopped onion, and shredded cheddar cheese. Stir until evenly distributed throughout the egg mixture.
  4. Fold in the cooled turkey sausage and season with salt and pepper. Mix until everything is evenly combined.
  5. Pour the mixture into the prepared baking dish, spreading evenly to the corners.
Cooking
  1. Bake for 30-35 minutes or until the center no longer jiggles when you gently shake the pan and a knife inserted in the center comes out clean. The top should be golden brown with slightly crispy edges.
  2. Let the casserole rest for 5 minutes before cutting into squares. This prevents it from falling apart and allows the structure to set properly. Serve warm for best texture and flavor.

Notes

Feel free to experiment with different vegetables and cheeses. For a Mexican style, add taco seasoning to the turkey sausage and top with avocado and salsa. Can be prepared ahead of time and stored in the fridge overnight.
