Ingredients
  

For the pancake batter
  • 1 cup cottage cheese Can be substituted with low-fat or fat-free.
  • 1 cup oats Can be substituted with blended whole-grain flour or almond flour.
  • 3 pieces eggs For vegan, replace with flaxseed eggs.
  • 1 teaspoon baking powder
  • 1 tablespoon honey or maple syrup Optional sweetener.
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray or oil for the pan For greasing the pan.

Method
 

Preparation
  1. In a blender, combine cottage cheese, oats, eggs, baking powder, honey or maple syrup (if using), vanilla extract, and salt. Blend until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease it with cooking spray or oil.
Cooking
  1. Pour batter onto the pan to form pancakes.
  2. Cook for about 2-3 minutes on each side or until golden brown.
Serving
  1. Serve warm with your favorite toppings such as fresh fruits, syrup, or yogurt.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze individually wrapped for up to a month. Reheat on a skillet or microwave.
